Açaí is one of the most exciting tropical fruit ingredients for the food and foodservice industry. Demand for bowls, smoothies, sorbets, functional beverages and modern health-oriented concepts continues to grow. At the same time, Açaí is more complex to evaluate than many other fruits.

Açaí is not a standardized one-size-fits-all product. For purchasing, product development and quality management teams, the key question is which product form, quality and specification best fit the intended application.

Is the goal a flexible Açaí purée for in-house recipe development? An intense bowl base with strong colour and texture? A ready-to-use Açaí sorbet for foodservice? Or an industrial application where dosage, declaration, stability and cost structure are the main priorities?

The central question is therefore not: Which Açaí quality is the best? But rather: Which Açaí quality performs the required function in the final product?


1. Why Açaí Should Not Be Treated as a Standard Product

For fruits such as mango or passion fruit, the product logic is relatively clear for many buyers: purée, concentrate or a combination of both. With Açaí, the situation is more complex.

In practice, Açaí is often associated with colour, the bowl trend and superfood positioning. For professional applications, however, this is not enough. Relevant parameters include solids content, texture, Brix, formulation, added ingredients, cold chain, packaging and application.

An Açaí product for bowls has to meet different requirements than an Açaí purée for smoothies. A foodservice solution needs to be evaluated differently from an industrial raw material. And a formulated Açaí sorbet base is not the same as pure Açaí purée.

That is why Açaí should always be evaluated in relation to the intended application — not only by colour, taste or price.


2. How Açaí Is Processed — and Why Water Content Matters

Açaí differs significantly from fleshy fruits such as mango, guava or papaya. The edible layer of the Açaí berry is relatively thin and surrounds a large seed. After harvesting, Açaí is therefore not simply puréed like a fleshy fruit, but processed through a specific extraction process.

In simplified terms, the berries are cleaned, softened with water and mechanically processed to separate the fruit pulp from the seed. The result is an Açaí pulp whose composition depends strongly on how much fruit substance and how much water are present in the final product.

This is exactly why solids content is such an important parameter for Açaí. It provides an indication of how much actual Açaí substance the product contains. A higher solids content generally stands for more body, denser texture and a more intense Açaí character. A lower solids content can be lighter, more fluid and easier to process in certain applications.

For purchasing and product development teams, this means that Açaí should not only be requested as “purée”. Solids content, texture, application and product specification should always be considered together.


3. What Does Açaí Purée Mean?

Açaí purée is the processed fruit base of the Açaí berry. It serves as a flexible raw material for applications where recipe control, fruit character and in-house product development are important. Typical applications include:


  • bowls and smoothie bases

  • smoothies and beverages

  • sorbets and ice cream

  • dairy and plant-based applications

  • industrial formulations

  • functional product concepts


The main advantage of Açaí purée is flexibility. R&D teams can control sweetness, texture, fruit content, additional ingredients and positioning themselves. Açaí purée is therefore especially suitable when Açaí is used as an ingredient — and not as a ready-to-use foodservice solution.


4. What Do Solids Mean in Açaí?

One of the central quality parameters in Açaí is solids content, often referred to simply as solids or total solids. In simplified terms, this value describes how much actual Açaí substance the product contains.

The higher the solids content, the more body, texture and Açaí character a product can typically provide. An Açaí purée with higher solids often appears more intense, denser and more structured. A quality with lower solids can be lighter, more fluid and easier to dose in certain applications.

Important: higher is not automatically better. The application is what matters.

For bowls or thicker smoothie bases, a higher solids content can make sense because texture, colour and body are important. For beverages or lighter smoothies, a less dense quality may perform better if drinkability, dosage and cost structure are more relevant.

In practice, Açaí qualities are often differentiated by ranges such as 12–14% or 14–16% solids. These values provide useful orientation, but they do not replace application testing. Only in the final recipe does it become clear whether texture, colour, taste, dosage and stability really work together.


5. Açaí Purée or Açaí Sorbet?

One of the most important distinctions for B2B customers is the difference between Açaí purée and Açaí sorbet.

Açaí purée is a raw material. It offers maximum flexibility for in-house recipes, industrial development and individual product concepts. The customer controls sweetness, texture, fruit blend, declaration and application.

Açaí sorbet, by contrast, is a formulated solution. Depending on the variant, it already contains additional ingredients and is designed more strongly around direct use, portioning, consistency and foodservice handling. For Açaí bowls, dessert concepts, gastronomy, cafés or store concepts, this can be significantly more efficient.
